- Peel the cucumber and cut it into 0.5 cm cubes. Transfer to a bowl.
- Finely chop the onion, chives and chili pepper. Add them to the bowl.
- Add the vinegar, mustard, salt, pepper and lemon zest. Mix with a spoon.
- Wash the oysters on the outside with a generous amount of running water. Open them with an oyster knife, rinse them to remove any dirt they may have inside them.
- Spread crushed ice on a serving platter and place the oysters over it.
- Serve with a spoonful of oyster sauce over each oyster and eat immediately.
