Goat Cheese Tart

Goat Cheese Tart

Method

  • In a mixer, add the flour, salt and butter.
  • Beat with the whisk attachment until the butter has completely dissolved. Lower speed and add the egg yolk.
  • Gradually add the cold water, until the dough comes together and is soft enough to work with.
  • When ready, wrap the dough in cellophane wrap. Refrigerate and allow to rest, for at least 1 hour.
  • Preheat oven to 160* C (320*F) Fan.
  • Grease a 28 cm round tart pan with butter and dust with flour and set aside.
  • Generously grease 2 sheets of parchment paper with butter and dust with flour.
  • Place the rested dough in between the 2 sheets.
  • Using a rolling pin, roll out the dough, between the 2 sheets of parchment, until it becomes as thin as 10 sheets of paper in a pile.
  • With the aid of the rolling pin, transfer the dough to the tart dish.
  • Press down on the dough with your hands, so that it fits into the tart dish and sticks to the sides.
  • Use a fork to pierce small holes onto the bottom of the tart.
  • Cover with plastic wrap and add baking weights (or beans). Cover the weights with another layer of plastic wrap by folding it over.
  • Bake the tart, along with the weights, for ½ an hour.
  • Remove from oven and turn up the temperature to 180*C (350*F). Remove the weights and brush with egg wash (egg yolk diluted with some water).
  • Bake for another 5 minutes, until it turns a beautiful golden brown.
  • Remove tart from oven and allow to cool.
  • Turn the oven temperature down to 140* C (280*F).
  • When the tart has cooled crumble the goat cheese over the top and sprinkle with chives.
  • In a bowl, whisk together the heavy cream, eggs, yolks, nutmeg pepper and thyme.
  • Carefully transfer the tart back to the oven and place on oven rack.
  • Then, add the cream mixture over the filling with a measuring cup.
  • Bake for 1 hour, until the filling has thickened and golden brown.
  • Serve at room temperature.
