Christmas Cake with Chocolate Trees

Method

For the sponge cakes

  • Preheat oven to 170* C (338* F) Fan.
  • Prepare a 30x40 cm rectangular pan by lining it with parchment paper, greasing it with butter and dusting with cocoa powder. Set aside until needed.
  • In a mixer, add the eggs and sugar and beat on high speed using the paddle attachment until light and fluffy.
  • In a separate bowl, combine the flour and cocoa powder.
  • Lower mixer’s speed and add the flour mixture.
  • Mix for a few seconds and transfer mixture to prepared baking pan.
  • Bake for 20 minutes.
  • Remove from oven and allow it to cool on a wire rack for 10 minutes.
  • Turn out onto wire rack and allow it to cool completely.
  • Cut out two circles that are 20 cm in diameter, using a metallic cutter or a plate that is the same size. Place the cutter at one corner of the sponge cake and cut out. Then place it at the diagonal corner and cut out.
  • You will have to create the third circle out of the remaining sponge cake that will be made out of 2 half circles. In order to do this successfully, place the diameter of the cutter on the large side of the sponge cake and cut out a half circle. Repeat the same process on the diagonal side.
  •  

For the raspberry cream

  • Melt the chocolate couverture in a bain marie and keep it warm.
  • Place a saucepan over medium heat.
  • Add the 350 g of milk, vanilla powder and sugar. Allow it to come to a boil without stirring.
  • In the meantime, whisk the egg yolks, cornstarch and remaining milk in a bowl, making sure there are no lumps.
  • When the mixture in the saucepan comes to a boil, stir and remove from heat.
  • Add the egg yolk mixture to the saucepan while continuously whisking and place back on heat.
  • Whisk continuously until it boils and thickens.
  • When you have a thick and smooth cream, remove from heat and add the white chocolate, raspberries and butter. Stir with a spatula until completely incorporated.
  • Spread the mixture in a baking pan and cover with plastic wrap, making sure it touches the surface of the cream directly so that it doesn’t form a film on top.
  • Refrigerate.

For the frosting

  • Beat the heavy cream in a mixer on high speed using the whisk attachment until fluffy.
  • Gradually add the icing sugar and continue beating until you create a thick, smooth whipped cream.

For the chocolate trees

  • Fill a pastry bag with the melted chocolate.
  • Pipe out small Christmas trees on a sheet of parchment paper and refrigerate to chill.
  • When ready, very carefully remove the trees from the parchment and decorate Christmas cake.

To assemble

  • In a saucepan, add the water and sugar. Stir until the sugar dissolves completely.
  • Remove from heat and set it aside to cool.
  • When it is lukewarm, add the cognac and stir to incorporate.
  • Allow the syrup to cool completely.
  • When ready, drizzle over sponge cakes.
  • Spread half of the raspberry cream over one of the sponge cakes.
  • Cover with the second sponge cake and spread the remaining cream over it.
  • Cover with the third sponge cake.
  • Place the whipped cream on the top of the cake and spread it evenly over the whole cake with a spatula.
  • Decorate with chocolate trees and voila!!!!
