Churros with milk chocolate ganache
  • Vegetarian Diet

Churros with milk chocolate ganache
  • In a pot, add the water, butter, sugar and salt. Place over medium heat.
  • When the butter melts and the mixture starts to boil, remove pot from heat and add all of the flour at once. Mix thoroughly with a wooden spatula, until all of the flour is absorbed.
  • Place pot back over heat and lower heat. Mix vigorously for 2-3 minutes, scraping the bottom of the pot with the wooden spatula, to remove any pieces of dough that may be stuck.
  • Transfer dough to a mixer and beat for 1-2 minutes using the whisk attachment so it can cool. Then add the eggs, one at a time, making sure each addition is completely incorporated before adding the next. You want to create a soft, elastic dough that stretches sort of like gum when you pull on it.
  • Transfer dough to a pastry bag fitted with a star tip.
  • Heat a generous amount of sunflower oil in a deep pan or pot.
  • Pipe out some of the dough and use a pair of scissors to cut the flow when it reaches the size you want. If you make the churros 10 cm then you will get 30 pieces in total.
  • Fry them for 2-3 minutes, until golden. Turn them over with a slotted spoon or a fork and fry until golden.  
  • While the churros are frying, combine the sugar and cinnamon in a wide bowl.
  • Remove the churros from the pan with a slotted spoon and dip them into the sugar-cinnamon mixture. Roll to coat completely and transfer to a plate.

For the milk chocolate ganache

  • Chop the milk chocolate couverture into small pieces and add them to a bowl.
  • In the meantime, heat the heavy cream in a saucepan over medium heat. As soon as it comes to a boil, remove from heat and pour over couverture.
  • Whisk slowly until the chocolate melts completely and is incorporated and you have a smooth ganache.
  • Serve milk chocolate ganache with churros.
