Triple chocolate cupcakes
Method

For the frosting 

  • Break up the dark chocolate couverture into little pieces with your hands and transfer to a bowl.
  • Add the heavy cream and cover the bowl with plastic wrap.
  • Heat in a microwave for 2 ½ minutes at 800 watts. 
  • When ready, remove from microwave and stir with a spatula until completely combined.
  • Cover with plastic wrap again and set aside.

For the filling

  • Break up the dark chocolate couverture into little pieces with your hands and transfer to a bowl.
  • Add the heavy cream and cover the bowl with plastic wrap.
  • Heat in a microwave for 1 ½ minutes at 800 watts. 
  • When ready, remove from microwave and stir with a spatula until completely combined. You want the mixture to be thinner than the frosting.
  • Cover with plastic wrap and set aside.

For the cupcakes 

  • Preheat oven to 160* C (320* F) Fan.
  • Break up the dark chocolate couverture with your hands and transfer to a large bowl.
  • Add the cocoa powder and boiling water.
  • Mix with a spoon until the chocolate melts completely.
  • Add the sunflower oil, heavy cream, sugar, egg, vanilla extract and salt.
  • Mix until completely combined and you have a fluid mixture.
  • In a separate bowl, add the flour and baking soda.
  • Break up the milk chocolate couverture and white chocolate couverture with your hands and transfer to a bowl.
  • Mix with a spoon.
  • Add the flour mixture to the fluid mixture and stir with a spoon.
  • Transfer to a measuring jug.
  • Line a cupcake baking pan with cupcake liners and pour the mixture evenly among the cups.
  • Place on a high rack in the oven and bake for 20-25 minutes.
  • When ready, remove from oven and allow them to cool for 30 minutes.

To assemble cupcakes

  • Transfer the frosting and the filling into 2 separate pastry bags.
  • Pick up a cupcake and cut out a small hole in the center on the top side with a small knife. You can keep the piece of cupcake you remove to decorate.
  • Pipe the filling into the hole you created in the cupcake.
  • Pipe the frosting over the top of the cupcake.
  • Repeat the same process for all the cupcakes.
  • Serve with melted white chocolate and pieces of chocolate couverture.
