Bumble bee delight

For the cake

  • Preheat the oven to 170ο C (340ο F) set to fan.
  • In a mixer’s bowl, beat the butter and the sugar with the whisk attachment at high speed, for 3-4 minutes until they are fluffy.
  • Lower the speed, add the eggs one by one, and wait for each one to be absorbed before adding the next.
  • Add the vanilla extract and the juice.
  • Sift the flour, cocoa powder, baking powder, salt, and add them to a bowl.
  • Add the mixture with the solid ingredients into the mixer, in batches, until all of the ingredients are homogenized. If you want the cake to become fluffy, you will have to mix the flour as little as possible.
  • Butter and flour a 36x28 cm baking pan well, and pour the mixture in.
  • Bake for 35-40 minutes.
  • Remove and set the cake aside to cool for 10 minutes into the baking pan.

For the cream

  • In a pot add 700 g of the milk and the vanilla extract.
  • Add the sugar but do not mix. Turn on the heat to medium and heat the mixture until it comes to a boil.
  • In a bowl add the corn starch and the egg yolks. Add the remaining 300 g of the milk, the lemon zest, and with a hand whisk, whisk well so that no lumps will be formed.
  • When the milk boils, slowly add the pot’s mixture into the bowl.
  • Whisk very well. Return the mixture to the pot and place it on low heat.
  • Keep whisking until the mixture thickens. Try to “cook” the cream so that the flour’s flavor will disappear. This process can last up to 10 minutes by cooking on low heat and whisking constantly.
  • Remove from the heat, add the butter, the salt, and mix until the butter melts.
  • Spread the cream over the cold cake.
  • Cover the cream with plastic wrap, making sure to cover the entire surface to prevent a skin from forming, and refrigerate the cake for 2-3 hours to chill well.

For the topping

  • In a bowl add the gelatin, the cold water, and let them soak for about 5 minutes until the gelatin softens.
  • Place a saucepan over medium-low heat, add the jam, and heat for 2-3 minutes. Be careful not to boil it!
  • Remove from the heat, add the gelatin with the water, and mix with a wooden spoon until the gelatin melts.
  • Set the mixture aside for 10 minutes to cool, until needed.
  • Take the baking pan with the cake out of the refrigerator, remove the plastic wrap, and spread the cold jam on top. Refrigerate again for 3-4 hours until the jam thickens.
  • Drain and wipe the peaches well. Place them onto a rack.
  • Transfer the melted couverture into a pastry bag. Cut its bottom with a pair of scissors so to create a small hole. Spread the chocolate in strips over the peaches.
  • Place 2 candy eyes on each peach by leaving a small gap between them.
  • Put a little chocolate between the eyes in order to form the nose.
  • Form two slits over the eyes and place the almond slivers.
  • Spread the mixture with the jam over the cake, cut it into 12 pieces, and place the peach “bees” on top of each piece.
  • Serve.
