Apple shaped dessert

Method

For the jello

  • Place a pot over medium heat and add the juice.
  • In a bowl, add the sugar, agar-agar, and mix with a spoon. Add them into the pot with the juice.
  • Stir with a hand whisk until it comes to a boil. Remove and set aside until it thickens.
  • Transfer the jello into a container and beat it with an immersion blender at high speed, so that it breaks down.
  • Add the ginger, cinnamon, the apple finely chopped without the peel, and mix with a spoon.
  • Fill 8 ice cubes and place them into the freezer for 2 hours to freeze well.

For the mousse

  • Add the gelatins into a bowl and fill it with cold water. Set aside for 5-6 minutes, to soften.
  • Place a pot over medium heat and add the milk, juice, vanilla extract, salt, and mix.
  • As soon as it comes to a boil, add the gelatins well drained, and mix until they melt. Remove from the heat.
  • Add the white chocolate couverture, finely chopped, into the pot’s hot mixture, and allow 1 minute for it to start melting. Mix with a hand whisk until the ingredients are homogenized.
  • Set aside for 1 hour until it cools very well.
  • As soon as the mixture cools, add the whipped cream in batches and stir softly with a spatula. Transfer into a pastry bag. The whipped cream must be lightly beaten and not too thick.

To assemble

  • In a special silicone mold with 8 cavities in the shape of an apple, add a little of the mousse.
  • Add one jello cube and fill with the remaining mousse. Place into the freezer for 3-4 hours, until well frozen.

For the cocoa butter

  • In a pot, add the cocoa butter and transfer over low heat. Let it melt, but not boil.
  • Remove from the heat and add the white chocolate couverture finely chopped. Wait 1 minute until it starts melting and then, mix with a ladle until they are homogenized.
  • Transfer into a container and beat with an immersion blender at the lowest speed.
  • Set aside to cool well.

For the mirror glaze

  • Add the gelatin sheets into a bowl, add cold water and allow 5-6 minutes for them to soften.
  • Place a pot over medium heat and add the water, sugar, glucose, stir, and let it come to a boil.
  • Add the gelatins drained from the water, the condensed milk, and stir with a hand whisk.
  • Remove from the heat, add the white chocolate couverture finely chopped, and mix with a ladle until it melts well.
  • Beat with an immersion blender at low speed, and divide the mixture into two containers.
  • In one of the containers, add the red food coloring paste and in the other, the green one. Beat with the immersion blender, and let them cool well. Their temperature should be 28-30ο C (82-86ο F), so that they will be able to stand on our dessert.
  • Remove the desserts from the freezer, and take them out of the molds. Place wooden skewers at the end of the apple and dip it into the cocoa butter. Let it cool a bit, and dip it in again. Let it stabilize.
  • Follow the same process for all of the apples.
  • Then, dip into the green or red food coloring paste, and after it dries a little, dip once again. 
  • Serve with crumble, cloves as stem, and leaves.
