Orange Crème Brulee

Method

For the orange rinds

  • Use a vegetable peeler to remove the rind from the orange, making sure you only cut off the orange part without any of the white pith that is bitter.
  • Cut in to very thin slices.
  • Place a saucepan over high heat and bring to a boil.
  • Add the sliced rind and boil for 2-3 minutes.
  • Drain. Place back in saucepan and add fresh water.
  • Repeat the same process twice more to remove the bitterness.
  • Drain one last time and transfer back to saucepan.
  • Add the 50 ml of water and 50 g sugar.
  • Boil for 2-3 minutes.
  • Remove from heat and the sweet orange rinds are ready.

For the caramel

  • Place a small pot over medium heat.
  • Add the sugar and orange juice.
  • Simmer for 10-15 minutes, stirring often until the sugar melts and the color of the mixture becomes more golden. The exact amount of time needed depends on the type of pot used and the intensity of heat. It can take anywhere between 10-15 minutes.
  • Divide the mixture evenly between 6 ramekins that hold 170g-200g.
  • Set aside for 10 minutes.

For the crème

  • Preheat oven to 160* C (320*F) Fan.
  • Heat the milk in a saucepan over medium heat until small bubbles form around the edges and remove from heat.
  • In a bowl, whisk the eggs, sugar and salt.
  • Add half of the warm milk and whisk to incorporate.
  • Transfer to saucepan and incorporate with the remaining milk.
  • Add the orange zest and orange extract. Stir well.
  • Pour over the caramel in the ramekins, dividing evenly.
  • Place ramekins in a baking pan and add enough boiling water so that ¾ of the height of the ramekins are covered.
  • Bake for 30-35 minutes.
  • When ready, remove from oven and remove ramekins from water.
  • Set them aside to cool for 1 hour.
  • Cover with aluminum foil and refrigerate for at least 3 hours.
  • When ready, very carefully run the blade of a knife around the edges of each ramekin to separate the crème from the ramekins.
  • Turn out on to a serving platter.
  • Serve immediately along with sweet orange rinds and syrup.
