Banoffee mille feuille (montée)

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

    It is usually followed when someone is allergic to nuts.


For the cream

  • In a pot, add half of the sugar, the vanilla extract, 400 g milk, and transfer on heat. Let the mixture get hot.
  • In a bowl, add the remaining sugar, the yolks, and mix well with a hand whisk.
  • Add the remaining milk, the cornstarch, and mix well.
  • As soon as the milk in the pot gets hot, slowly transfer it into the bowl with the yolks by constantly stirring.
  • Add the mixture into the pot again, transfer over medium heat, and mix with the hand whisk until it thickens.
  • As soon as the cream thickens and there is no froth, remove from the heat, and add the butter, the dulce de leche, and mix well.
  • Add the cream into a bowl, cover with plastic wrap, and refrigerate for 2-3 hours.

To assemble

  • Preheat the oven to 190ο C (374ο F) set to fan.
  • Spread the puff pastry sheets onto your working surface and cut strips from the larger side.
  • Transfer onto a baking pan lined with parchment paper, dust with a little sugar and press with a rolling pin so that it sticks onto the puff pastry. Flip over the sheets, and follow the same process.
  • Cover with parchment paper, place a baking pan on top, and bake for 25-30 minutes.
  • Remove and set aside to cool well.
  • Mix the cream with a spatula so that it becomes fluffy and add it into a pastry bag with a star tip.
  • Place one puff pastry piece on a serving dish and spread the 1/3 of the cream over its whole surface.
  • Place another puff pastry piece on top and cover with another 1/3 of the cream. Follow the same process 2 more times. Do not add cream on top of the last piece.
  • Cut the banana into slices and decorate the mille feuille. Spread the whipped cream.
  • Serve with icing sugar, cinnamon, the remaining puff pastry crumbled, and chocolate couverture shavings.
