- 340 g praline couverture (2 packets)

- 1 teaspoon vanilla extract
- 100 g forest fruit or your choice of fruit

- Cut up the chocolate couverture in a bowl and melt in the microwave for 2 minutes at 800 watts.
- Stir until it cools to about body temperature.
- In the meantime, whisk the heavy cream along with the vanilla extract in a mixer or by hand, until it thickens and becomes a light whipped cream. Be careful, you don’t want it to become too thick, it should have the texture of yogurt.
- Add 1/3 of the whipped cream to the melted chocolate and stir with a spatula quickly and thoroughly until completely incorporated. It is important to make sure the chocolate is not hot so the whipped cream doesn’t split.
- Add the chocolate mixture to the whipped cream and gently stir with a spatula.
- Crumble the Christmas cookies with your hands and drop them into serving glasses to create a base.
- Cover with mousse and refrigerate for at least 20 minutes to chill and become firm.
- When ready, serve with forest fruit.
