Watermelon pudding

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

  • Egg Free Diet

    It is usually followed when someone is allergic to this food.

Watermelon pudding

Method

  • In a food processor, add the pieces of watermelon, without the rind and seeds. Process until it pureed or liquefied. Set aside.
  • Combine the sugar and nisasta in a non-stick pot.
  • Add the watermelon puree while stirring continuously with a wooden spoon.
  • Allow mixture to come to a boil over medium heat.
  • Stir often and scrape the bottom of the pot so the mixture doesn’t stick there.
  • Boil and stir for about 5 minutes, until the mixture thickens.
  • Remove from heat and add the vanilla extract.
  • Use a spatula to help pass the mixture through a sieve and let it fall into a bowl.
  • Cove bowl with plastic wrap, making sur it touches the surface of the mixture so that it does not form a layer of skin on top.
  • Refrigerate for about 4 hours.
  • Serve pudding in bowls, topped with whipped cream, coarsely chopped Pistachio nuts or any other nuts or seeds you like.

Tip

This pudding can also be served with cinnamon, chocolate and crushed cookies!
