Apple and Cranberry Tart
Method
  • Preheat oven to 170* C (338* F) Fan.
  • Add the flour, caster sugar and butter in a bowl. Where disposable gloves so that the butter won’t melt from the temperature of our hands. Start to mix the mixture by hand for about 5 minutes. Rub it together between your hands to incorporate the butter into the flour.
  • Add the 2 eggs and mix with your hands. As soon as the mixture takes on a dough like texture, wrap in plastic wrap. Refrigerate and allow to rest for at least 1 hour.
  • Remove from refrigerator and place between 2 sheets of parchment paper that have been dusted with flour. Roll out the dough between the 2 sheets with a rolling pin. Allow it to spread until the edges of the sheets. You want to create a round tart shell that is 26 cm in diameter and 0.4 cm thick.
  • Grease and flour a round 23 cm tart pan. Place dough over pan.
  • Press down on the dough gently to fit it into the tart pan, making sure it sticks to the sides. Pierce the bottom part of the shell with a fork. Cover with 2 sheets of plastic wrap, in a crisscross manner. Add baking weights (or beans). Cover these with plastic wrap also.
  • Refrigerate for 30 minutes.
  • Bake for 20 minutes.
  • Remove baking weights and brush tart shell with egg wash. Bake for another 6-7 minutes or until golden.
  • While the tart shell is baking, beat 225 g in a blender until completely broken down. Transfer to a large bowl. Add 225 g cranberries and brown sugar.
  • Peel the apples with a sharp knife. Grate 1 orange for zest. Juice the orange and collect 1 tablespoon juice. Grate the apple, using the wide blades. Place in a bowl and add the tablespoon of orange juice and zest.
  • Melt the butter in a small saucepan or in a small bowl in the microwave (set at 800 watts for 40 seconds).
  • In another bowl, add 2 remaining 2 eggs and butter. Mix with a hand whisk. Add the cognac. Add this liquid mixture to the apple mixture and mix together. Add the almond-cranberry mixture and mix until completely combined.
  • Pour into baked tart shell.
  • Sprinkle with toasted almond slivers and bake for 30 minutes or until golden.
  • Remove from oven and allow to cool for 20 minutes. Sprinkle with remaining cranberries.
  • Heat the marmalade in a small pan along with the remaining orange juice. As soon as it comes to a boil, remove from heat. Use a pastry brush to brush all over the tart. Allow to cool completely and remove from pan. Serve.
Tip
The riper the apples.. the tastier your tart will be!
