- Line a 12 cup muffin pan with paper liners.
- Preheat oven to 160* C (320* F) Fan.
- Beat the butter and sugar together, until they become lighter in color and a creamy mixture is created. Then add the eggs and beat combined.
- Add the flour, yogurt, baking powder and baking soda. Beat until all the ingredients become completely incorporated into the mixture.
- Divide batter evenly between the 12 muffin cups.
- Bake for 25 minutes, until the muffins rise, are firm to the touch and golden brown.
- Remove from oven and let them cool in the pan for 10 minutes. Remove from pan and sprinkle with sugar while still warm.
- When completely cool, remove paper liners. Put some jam in a piping tube and fill the muffins from the bottom.
