New Year’s cake without a mixer – Vasilopita
Method
  • Preheat oven to 170* C (338* F) Fan.
  • Grind the granulated sugar, mahlab, mastic and nutmeg with a mortar and pestle, until finely ground.
  • Transfer to a bowl and add the flour and baking powder. Mix with a spoon.
  • In another bowl, add the eggs, milk, vegetable oil, orange zest, vanilla extract and icing sugar. Whisk thoroughly.
  • Add the flour mixture and mix well with a spatula until all of the ingredients are completely combined.
  • Brush the bottom and sides of a 30x40 cm baking pan with sunflower oil and dust with flower so that the cake doesn’t stick.
  • Add the cake batter and bake for 1 hour.
  • When ready, remove from oven and allow to cool for 1 hour.
  • Decorate the surface of the cake with whipped cream and serve.
