Cookie dough for 5 types of cookies

Method

  • Preheat oven to 160* C (320* F) Fan.
  • In a bowl, combine the butter and sugar with a wooden spoon.
  • Add the egg yolk and vanilla extract. Continue mixing until you the ingredients are completely incorporated.
  • Add the flour and mix with wooden spoon until the mixture thickens.
  • Then, mixing will be easier if done with your hands so wear disposable gloves and mix with your hands until you have created a nice cookie dough.
  • Refrigerate for 1 hour so it can become more firm.
  • This is your basic cookie dough.
  • Divide dough into 5 even pieces.

1st type of cookies

  • Finely chop the pistachio nuts and spread them out on a working surface.
  • Take the first piece of dough and create a long cylinder.
  • Roll the cylinder of dough over the pistachio nuts and slice into 0.5 cm rounds.

2nd type of cookies

  • Dust the second piece of cookie dough with flour.
  • Place it in between two sheets of parchment paper.
  • Roll it out to a 0.5 cm thickness. Dust with more flour if necessary.
  • Use a circular cookie cutter and cut out 3 cm discs.
  • Using a 1 cm circular cookie cutter and make a hole in half of the cookies.
  • Spread some jam over the 3 cm circles and cover with circles with the hole in the middle.

3rd type of cookies

  • Dust the third piece of cookie dough with flour.
  • Place it between two sheets of parchment paper.
  • Roll it out to a 0.5 cm thickness. Dust with more flour if necessary.
  • Use a knife to cut it into rectangular shapes that are 4x1 cm.
  • After baking, dip half the cookie’s surface into the glaze and sprinkle with lemon zest.

4th type of cookies

  • Roll out the dough in between two sheets of parchment, using flour to assist you, until dough is 0.5 cm thick.
  • Use a 2 cm round circular cookie cutter and sprinkle with chocolate drops.
  • Press down on them to help them stick.

5th type of cookies

  • Divide the piece of cookie dough in half.
  • Mix the first half with green food coloring and roll out into a large rectangle.
  • Brush the surface with some milk.
  • Roll out the second half of cookie dough into the same size as the green one and place one over the other. Press down on it to stick.
  • Roll into a tight cylinder and slice into 0.5 cm rounds.

The cookies may differ between one another as far as shapes and ingredients but the baking time is the same for all of them. Bake for 10-12 minutes, remove from oven and allow them to cool completely on a wire rack.
