Coffee cup cupcakes

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

For the cupcakes

  • Preheat the oven to 160ο C (320ο F) set to fan.
  • In a bowl add the boiling water, the chocolate finely chopped, and let it set for a few seconds to melt. Whisk until the chocolate melts completely.
  • Add the cocoa powder, the coffee, the sugar, and whisk well.
  • Add the egg, the heavy cream, the sunflower oil, the vanilla, the salt, and mix.
  • In another bowl mix the flour with the baking powder and add them to the bowl with the rest of the ingredients. Whisk well until the ingredients are homogenized.
  • In a 6-cup muffin pan, place the special baking cups and fill them with the mixture.
  • Bake for 20-25 minutes and set aside to cool.

For the ganache

  • In a bowl add the chocolate crumbled into pieces, the heavy cream, and cover with plastic wrap.
  • Microwave at 800 Watt for 1 ½ -2 minutes until melted.
  • Remove and set it aside.

For the filling

  • In a bowl add the cream cheese, the icing sugar, the vanilla, and whisk.
  • Transfer into a pastry bag and refrigerate.

To assemble

  • Place the sugar paste onto your working surface and roll it out into 20x6 cm, using a rolling pin.
  • Cut a 1 cm thick strip from the longer side.
  • With a knife cut the remaining sugar paste all around, so that it is 18x5,5 cm. Cut the piece you removed into small pieces and set them aside to serve.
  • Wrap the sugar paste strip around the rolling pin. Set aside for 30 minutes until stabilized. You will use this piece as the cup’s handle.
  • Cut a cupcake all around to flatten its surface and make a small hole on its top side. Wrap with the sugar paste and stick it together with a little water.
  • Spread the edges of the handle with a little water and stick it onto the cup, from the seam side. Hold onto it by pressing lightly until it sticks well.
  • Add the filling into the cupcake and cover with the ganache.
  • Sprinkle with the sugar paste pieces and serve.
