Strawberry Cupcakes with White Chocolate Frosting

Strawberry Cupcakes with White Chocolate Frosting


  • Preheat oven to 180* C (350* F) Fan.
  • Beat the butter and sugar together for 5-6 minutes in a mixer on high speed, using the whisk attachment.
  • Add the eggs one at a time, waiting for each one to be completely incorporated in the mixture before adding the next.
  • Mash half of the strawberries by hand and add them to the mixture.
  • In a separate bowl, combine the flour with the baking powder and salt. Pour the milk into another bowl.
  • When the strawberries are incorporated in the mixture and it is light and fluffy, add some of the milk. When it has been absorbed add a part of the flour mixture. Repeat the same process, ending with the flour. When the mixture is combined and creamy, remove the bowl from the mixer.
  • Finely chop the white chocolate and cut the other half of the strawberries into small cubes. Add to the mixture and fold with a spatula.
  • Line a muffin pan with cupcake liners. If you don’t have any grease and flour the pan.
  • Fill a piping bag with the mixture and fill each cup 2/3 of the way.
  • Bake for 25 minutes.
  • When ready, remove from oven and set aside to cool.
  • While the cupcakes are baking, prepare the frosting.
  • Beat all of the ingredients in a mixer, using the whisk attachment, until light and fluffy.
  • Fill a piping bag and decorate cupcakes.
