Greek cabbage rolls
Greek cabbage rolls
Method
  • Place a large pot full of water over medium to high heat.
  • Chop off the stem from the cabbage with a sharp knife.
  • Place the cabbage in the pot, cover with lid and boil for 10 minutes.
  • Using a carving fork, remove each cabbage leaf that has softened and that comes off the cabbage easily. Place them aside to drain and continue removing leaves.
  • Using a knife, remove the central stem off of each leaf so that you can roll them easier.
  • Finely chop the onion and garlic.
  • Place a small pan over medium to high heat. Add 1 tablespoon of olive oil and sauté the onion and garlic for 2-3 minutes.
  • When ready, transfer to a bowl and add the ground meat, rice, finely chopped herbs, salt, pepper, cumin, lemon zest and the remaining olive oil. Mix well with your hands until all the ingredients are completely combined.
  • Place 4-5 cabbage leaves on the bottom of a pot (use any torn leaves).
  • To make the cabbage rolls, pick up one cabbage leaf at a time and add 1 heaping tablespoon of the mixture in the center.
  • Fold the sides of the cabbage leaves inward and roll.
  • Place the cabbage rolls in the pot, one next to the other lines.
  • As soon as you create the first layer, add a second and a third if necessary until you have added all of them.
  • Cover them with some of the remaining cabbage leaves, cover with a plate so that the cabbage rolls don’t fall apart while cooking.
  • Add warm or hot water until they are completely submerged and simmer for about 1 – 1 ½ hours.
  • When ready, remove from heat and allow them to cool for a while in the pot.
  • Dilute the bouillon cube in hot water and set aside.

For cream sauce

  • Melt the butter in a pot.
  • Add the flour and sauté. Gradually add the diluted bouillon cube in batches. Whisk well with each addition so that no lumps are formed in the mixture.
  • When you have added all of it, cook for 2-3 minutes until the sauce thickens.
  • Add the lemon juice, lemon zest, salt and pepper. Whisk for 1-2 minutes.
  • Serve over cabbage rolls.
