Healthy coconut ice cream
Healthy coconut ice cream
Method
  • In a mixer, add all of the ingredients, apart from the vanilla bean.
  • Use a sharp knife to slice the vanilla bean open and scrape out the seeds.
  • Add them to the mixer also and beat for 1-2 minutes, until the sugar has dissolved completely.
  • Place mixture in an ice cream maker and beat for 20-30 minutes, until the texture becomes smooth, soft and creamy.
  • Transfer to a bowl, cover with plastic wrap and place in the freezer for at least 4-5 hours, until it thickens.
  • If you don’t have an ice cream maker, beat all of the ingredients in the mixer, cover mixture with plastic wrap and place in freezer. Beat the mixture again every hour and place back in freezer (you can also just mix it with a spoon but it won’t turn out so fluffy). You will have to do this until the ice cream freezes and has the texture you like (the time needed will depend on how powerful your freezer is).
  • Serve your healthy coconut ice cream with ice cream cones and sprinkle with grated coconut.
