Muffins with halloumi cheese and mint

  • Preheat the oven to 180 *C
  • Blend all the liquid ingredients in a large bowl
  • Then add the egg and the yogurt and mix well • Subsequently, add up the flour and the baking powder (sifted)
  • As soon as the flour is absorbed, add the halloumi cheese as well as the mint
  • Spoon the mixture into the prepared cupcake tin (12)
  • Sprinkle generously with the sesame seeds and bake for 40-45, until well rised and ruby
  • Remove from the oven and allow to cool
  • Note: alternatively, you can use fresh mint instead of dried or even both of them
