Spring goes by so quickly and summer arrives.. Heat and humidity… Everyone wants to enjoy a nice refreshing beverage…
Spring also offers so many lovely, fresh smells… flowers that share their aromas. Wouldn’t it be great to preserve these aromas all year round? Well, it’s simple! Just follow my “recipe” and let your imagination run free. It will lead you down all sorts of sweet smelling and flavorful paths!
For this recipe you will need herbs or flowers you will want to preserve… along with sugar, water and citric acid…. and you’re ready to go!
- Submerge the flowers in cold water for a few seconds to wash away any dust or small insects.
- Transfer to a plastic or glass bowl, large enough to fit them.
- Place a large pot over medium heat and add the water and sugar.
- Heat until the sugar dissolves completely.
- Let it come to a boil and remove from heat.
- Carefully pour the syrup over the flowers in the bowl.
- Add the lemon and citric acid. Mix.
- Cover bowl with plastic wrap or a lid and set aside for 24 hours.
- When ready, place a strainer in a large bowl (large enough to hold the strainer and mixture).
- Line the strainer with some cheesecloth or a thin kitchen towel and pour the mixture in to it.
- Let it strain and taste the syrup to see how aromatic it is.
- Pour the syrup in to ½ liter bottles.
- Refrigerate for 4-5 days or place in the freezer for up to 10 months.
- To make a refreshing beverage, fill 1/3 of a glass with syrup.
- Top it off with ice, cold water, soda, sparkling wine or any alcoholic drink you choose. Make it to your liking!
- Instead of elderflowers, you can use 20-30 lavender flowers, 20 mint tips, 10 aromatic roses or a mixture of them.
