- 3 potatoes, peeled and cut into cubes
- 4 eggs
- olive oil
- 600 g mushrooms, cut into 4 pieces
- 2 cloves of garlic
- 2 tablespoons thyme leaves
- 100 g crumbled feta cheese or 140 g grated cheddar cheese

- Preheat oven to 200* C (390* F) Fan.
- Place the potatoes in a pot filled with water.
- Bring to a boil and cook for 5 minutes. Drain.
- Heat the oil in a large pan. Sauté the potatoes until golden brown.
- Add the mushrooms and sauté for about 5-8 minutes, until they soften.
- Add the thyme leaves and garlic. Cook for another minute.
- Spread mixture in a baking pan.
- Add cheese over the top and sprinkle with some more thyme.
- Make 4 wells in the mixture and crack an egg over each well.
- Bake for 12-15 minutes, until the eggs are cooked and the cheese starts to melt.
