Easy Niçoise-like Salad
Method
  • Boil the string beans in a pot full of salted water, just for a few minutes, so they still retain their crunch.
  • Strain and rinse under cold running water. Strain again.
  • Drain tuna from extra oil or water and break into large chunks.
  • Transfer to a bowl along with the string beans. Season with salt and pepper and toss.
  • Wash the Chinese cabbage leaves under running water and arrange them on a large serving platter as a base.
  • Add the tuna with the string beans, potatoes, tomatoes and olives over the cabbage leaves.
  • To make the dressing, combine the mustard, mayonnaise, garlic and parsley in a bowl. Pour over salad.
  • Season to taste and serve.
Tip
This dressing adds amazing flavor and suits any vegetable you like! You can substitute the potatoes with your choice of vegetable!
