Eggplant Pesto and Prosciutto Bruschetta

Method

For the eggplant pesto

  • Turn on the broiler set to 180* C (350* F).
  • Pierce the eggplants with a fork and grill for 45-50 minutes in the oven, rotating them from time to time.
  • When ready, remove from oven and set them aside until they are cool enough to handle.
  • Remove the skin and place the flesh in a strainer for about 1 hour so it can drain.
  • Transfer to a powerful blender along with the garlic and walnuts. Beat.
  • Add the parmesan, feta and olive oil. Beat again until the all of the ingredients are completely combined.
  • Season to taste and mix.

For the bruscheetta

  • Drizzle the slices of bread with some olive oil and toast in a sandwich toaster.
  • Lay them out on a clean working surface and spread 1 spoonful of eggplant pesto over each slice.
  • Top with 1 spinach leaf and 1 slice of prosciutto.
  • Sprinkle with freshly ground pepper, drizzle with olive oil and serve.
