White chocolate scones with an orange glaze

Method

For the scones

  • Preheat oven to 200* C (390* F) Fan.
  • In a food processor, add the orange zest and set aside.
  • Extract all of the juice from the oranges and add to a saucepan.
  • Add the cloves and place pan over low heat. Simmer for 2-3 minutes.
  • Remove the cloves with a spoon and add the cranberries. Continue simmering until they soak up all of the juice.
  • Transfer to a bowl and set aside to cool.
  • When cool, transfer to food processor (with the orange zest) along with the flour, baking powder, sugar, butter and a pinch of salt.
  • Beat for 1 minute until the mixture resembles breadcrumbs.
  • Add the eggs and beat until the mixture comes together to create a ball of dough.
  • Generously dust a working surface with flour and add the dough over it.
  • Beat the cranberries in a food processor until they are finely ground.
  • Add them to the dough and the white chocolate drops.
  • Gently knead the dough to distribute. It is VERY important NOT to knead the dough so that the scones can turn out nice and fluffy.
  • If the dough continues to stick to your hands, dust with some flour to help you.
  • Line a baking pan with parchment paper.
  • Roll out the dough to a circular disk that is 2 cm thick.
  • Cut disk into 8 even sized triangles.
  • If you have a cookie cutter in the shape of a star, you can make 8 stars and 8 squares.
  • Transfer scones to baking pan and bake for 10-12 minutes or until they rise and turn golden.
  • When ready, remove from oven and allow to cool on a wire rack.

For the glaze

  • While the scones are baking, prepare the glaze.
  • In a small bowl, add the orange zest, icing sugar, melted butter and 2 tablespoons orange juice.
  • Mix thoroughly until incorporated and you create a smooth, thick glaze. If your glaze is too thick, add a little more orange juice and if it is too thin, add a little more icing sugar.
  • Pour glaze over scones with a spoon and serve.
