- 200 g sunflower oil
- 200 g maple syrup
- 75 g granulated sugar
- 50 g dried apricots
- 50 g dried cranberries
- 50 g fresh ginger
- 350 g oats
- 50 g pumpkin seeds
- 1 teaspoon ginger powder

- Preheat oven to 180* C (350* F) Fan.
- Place a pot over medium to high heat.
- Add the oil, maple syrup and sugar. Heat until the sugar melts.
- Remove syrup from heat and set aside.
- Finely chop the apricots and cranberries. Place in a bowl.
- Grate the fresh ginger into the same bowl.
- Add the oats, pumpkin seeds and ginger powder and add to the syrup. Stir with a wooden spoon until completely combined.
- Transfer mixture to a 20x30 cm baking pan lined with parchment paper.
- Bake for 30 minutes.
- When ready, remove from oven and set aside to cool.
- Cut into pieces and serve.
