Bruschetta with Finocchio Oranges and Lemons

  • Vegetarian Diet

    Limits all sources of added sugars and encourages the reduction of high-carbohydrate (high glycemic index) foods. A claim that a food can be classified as LS can be made when it contains less than 5 gr of sugars per 100 gr of solid food or 2.5 gr of sugars per 100 ml of liquid food.

Bruschetta with Finocchio Oranges and Lemons

Method

  • Preheat oven to 180* C (350* F) Fan.
  • Cut the baguette into diagonal slices that are 1-2 cm thick.
  • Spread them out on a baking pan that has been lined with parchment paper.
  • Bake for 8-10 minutes to toast them.
  • In the meantime, in a bowl, combine the vinegar, lemon zest, orange zest, ginger, pepper, salt and olive oil with a spoon and set aside.
  • Peel the orange and lemon, making sure to remove all of the pith.
  • Slice in between the membranes to segment nicely. It is very important that the white membrane and pith are completely removed.
  • Add to the bowl.
  • Cut the finocchio in half. Finely chop half one half and thinly slice the other half, lengthwise.
  • Position the toasted bread on a serving plate.
  • Top with the lollo lettuce, sliced finocchio and sauce from the bowl.
  • Decorate with orange and lemon segments, finocchio leaves and onion rounds.
  • Serve.
