Stuffed Mackerel in the oven

Stuffed Mackerel in the oven


  • Preheat oven to 180* C (350* F) Fan.
  • Cut the potatoes in half, horizontally and then into 1-2 cm slices.
  • Transfer to a 25x35 cm baking pan.
  • Add the olive oil, wine, water, salt and pepper.
  • Wash and clean the fish thoroughly. Add them to the baking pan also.

For the filling

  • Cut the tomatoes in half, remove the seeds and dice.
  • Transfer to a large bowl and add the onion, garlic, parsley, olives, capers, lemon zest, lemon juice, thyme, pepper and 2 tablespoons olive oil.
  • Mix with a wooden spoon until completely combined.

To assemble

  • Fill the fish with the filling. If there is any leftover filling add it to the potatoes in the pan and mix.
  • Cover with a sheet of parchment paper and a sheet of aluminum foil.
  • Bake for 30-40 minutes.
  • Remove the parchment and aluminum and bake for another 10-15 minutes, until golden.
  • When ready, remove from oven, allow to cool and serve.
