Birthday cake


For the cake layers

  • Preheat the oven to 180°C (356° F) set to fan.
  • In a mixer’s bowl, beat the butter and the sugar with the paddle attachment at high speed, until they are fluffy and the mixture turns white and double in size.
  • Add the eggs one by one, waiting each time for your mixture to be homogenized before adding the next egg.
  • Lastly, add the vanilla extract and the flour.
  • Keep beating just until the mixture is homogenized.
  • Butter and flour 4 round 20 cm baking pans, and line them with parchment paper.
  • Remove from the bowl and pour the mixture into the baking pans.
  • Bake in the oven for 15-20 minutes or until you stick a toothpick inside, and it comes out dry.
  • When they are ready, remove them from the oven, and set aside to cool onto a rack for 15 minutes. Then, take them out of the baking pans and set them onto the rack to cool well for about 1 hour.

For the buttercream

  • In a mixer’s bowl, beat the butter with the paddle attachment at medium speed, until fluffy.
  • Add the sifted sugar in 2 batches, and after the first batch, pour the milk and vanilla extract inside.
  • Keep beating with the paddle attachment until your mixture is fluffy and increases a lot in volume. When the sugar is almost dissolved into the cream, then it is ready.
  • Divide the buttercream into five even parts.

For the ganache

  • Finely chop the chocolate and add it into a bowl.
  • Heat the heavy cream into a pot over medium heat, and let it come to a boil and start bubbling.
  • Pour the heavy cream into the bowl with the chocolate, and allow 30 seconds for the chocolate to start melting.
  • Mix with a spatula until the ingredients are homogenized and there is a smooth ganache.

To assemble

  • Place one of the three cake layers onto your working surface.
  • With a spatula, spread the 1/5 of the buttercream.
  • On top of it, add one more cake layer and spread again, the 1/5 of the buttercream.
  • Follow the same process for the third and fourth cake layers.
  • Cover the sides and surface of the cake with the buttercream, and make it smooth by using a large spatula or a knife.
  • It will be helpful if you set the cake onto a special cake base.
  • Refrigerate for long, until the buttercream is very thick.
  • With an ice cream scoop, take the remaining buttercream and shape 3 scoops onto the cake.
  • Decorate with any kind of candies, mini pretzels, or lollipops that you like.
  • Place an ice cream cone on top of each scoop.  
  • Decorate with the ganache, place your birthday candle, and serve.
