Chocolate Praline Ice Cream Torte

Chocolate Praline Ice Cream Torte

Method

For the filling

  • In a mixer’s bowl, add the heavy cream and beat on medium to high speed until it thickens and has a yogurt-like texture.
  • Add the praline and continue beating until homogenized. Remove mixer’s bowl from stand and scrape the mixture from the walls of the mixer’s bowl.

To assemble

  • Cover the inside of a bowl with plastic wrap.
  • Cut the cake into thin slices and cover the inside of the bowl. Add half of the filling, 1/3 of the hazelnuts and 1/3 of the praline.
  • Cover with a cake layer and on top add 1/3 of the hazelnuts and 1/3 of the praline and the rest of the filling.
  • Add the remaining 1/3 of the hazelnuts and the remaining praline and cover with the rest of the cake.
  • Cover with plastic wrap and gently press so that the ingredients stick together and there are no empty spaces.
  • Place in the freezer for 10-12 hours.

To serve

  • Turn out of bowl, remove plastic wrap and cut in pieces.
  • Serve with the melted dark chocolate couverture.
