Homemade Spaetzle Pasta in 2 minutes

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

Homemade Spaetzle Pasta in 2 minutes

Method

  • In a large bowl, add the flour, salt, pepper and nutmeg. Mix with a spoon.
  • In another bowl, beat the eggs and milk with a fork.
  • Make a small well in the center of the mixture and add the beaten egg mixture. Mix to combine.
  • Bring a pot full of salted water to a boil. Use an aluminum round tray which is larger than your pot so that you can balance it on top. Poke lots of holes on the bottom of it with a sharp knife. Place it over you pot of boiling water (you can also use a strainer or a potato mill with medium holes or blades).
  • Add a part of the dough in the aluminum pan. Use a spatula and spread the dough in the pan, pushing the dough through the holes. The little pieces of dough should fall right into the boiling water. Be careful. This has to be done very quickly so the dough doesn’t stick to the pan.
  • Boil the pasta until they rise to the surface of the water. This should not take more than 2-3 minutes.
  • Remove with a slotted spoon and transfer to a bowl that has been brushed with oil.
  • Add the next batch of dough to the pan and repeat process.

To serve

  • Heat a pan over high heat. Add a tablespoon of olive oil and sauté the garlic. Add the pasta and sauté. Finely chop any aromatics you choose and add them to the pan along with the cherry tomatoes. Remove from heat. You can add some butter at this point for some extra aroma.
  • Sprinkle with finely chopped parsley. Mix. Crumble some feta cheese over the top and serve.

Tip

If you let the dough rest for 15 minutes, it will be easier to make the pasta…
