Light spaghetti carbonara

    It is usually followed when someone is allergic to nuts.

  • Low in Sugars Diet

    Limits all sources of added sugars and encourages the reduction of high-carbohydrate (high glycemic index) foods. A claim that a food can be classified as LS can be made when it contains less than 5 gr of sugars per 100 gr of solid food or 2.5 gr of sugars per 100 ml of liquid food.

Light spaghetti carbonara

Method

  • Preheat the oven to 220ο C (430ο F) set to fan. Add a baking pan inside and let it get very hot.
  • Cut the mushrooms into irregular pieces and add them into a bowl. Add thyme, salt, pepper, 3-4 tablespoons olive oil, the sugar, and mix.
  • Cut the turkey into cubes and add it to the bowl.
  • Transfer to the hot baking pan and bake for 10 minutes.
  • In a pot with boiling water, add salt and the spaghetti. Boil according to the packet’s instructions.
  • Drain, add 2 tablespoons olive oil, and set aside. Keep the water aside.

For the bechamel sauce

  • Place the same pot on heat, and add the olive oil and the flour. Mix with a hand whisk.
  • Add the milk in batches, whisking constantly.
  • Add the cream cheese, salt, pepper, thyme, and 1 ladleful of the water where the spaghetti boiled. Grate 1/3 of the clove of garlic, and mix.
  • Transfer the spaghetti into the bechamel sauce and mix. If the pasta seems too dry, then add a little of the water where the spaghetti boiled.
  • Transfer to your serving platter. Add the mushrooms and the turkey on top, and serve with pepper and olive oil.
