If you think about it… soups are one of those foods that have come a very long way, as far as the way they are cooked… They started off simple.. boiling leftovers in water.. and have really evolved to gourmet dishes and instant soups-powders sealed in air tight packages that are magically transformed into soup just by adding water.
Their evolution is quite a big deal! Especially if you think that the first soups were created thousands of years ago. They are easy to make, they help playing hide and seek with vegetables (handy for moms), they are nutritious, tasty and quick, while their caloric value is something that is completely in your hands. If their main ingredients are butter and heavy cream, those calories are sent sky high! (Next are the soups that are made with pasta, rice, beans or meat, which transform them into a complete meal).
So, apart from the endless choices of vegetables you can add to them, there are many other ingredients that can really boost their flavor, aroma and nutrients. Which ingredients are my favorite? Well, first of all, I adore ginger! I use spring onions a lot and as well as garlic. I really trust fresh herbs (which I always add at the end) and play around with peppers and the rest of the spices available, such as curry for instance. Another interesting addition I really like to add to my soups is different kinds of cream cheeses, as well as crunchy, homemade croutons.
