The warm smell of dough cooking in the oven has filled the Kitchen Lab from wall to wall… Warm, crunchy, golden brown phyllo dough!!

Just to let you know I’ve been keeping up with all of your recipes! I’m continuously trying the newer and older recipes that impress me!

I was impressed by the care taken to make them, the innovative ideas and the beautiful, elegant pictures.

You all deserve a GREAT BIG… BRAVO!

For those of you who are not so careful or successful with their presentations yet… don’t give up! You will get better as time goes by…

This time…your pies caught my eye and interest!

We’ve got sesame seeds, poppy seeds, eggs, olive oil and flour…. EVERYWHERE!! Our rolling pins are ON FIRE!!!

Traditional pies, unusual and innovative pies, quick and easy, sweet and savory!

Delicious recipes, from all over Greece, combine all of the wonderful, healthy and exceptional Mediterranean ingredients.

Depending on the season, you can use the most delicious and freshest vegetables available.

And… you can make them ahead of time and store them in the freezer.

Pies are a smart and healthy solution for a meal any time of the day. A delicious snack for children in their lunchbox or your lunchbox!!

Of course, I couldn’t control myself so I added some of my own ideas in the recipe mix!

In the wonderful and hearty Feta Cheese Potato Pie by Maria Sourtzi and Spiro Antoniou, I added some gruyere cheese, which suited it perfectly!

…. and in Anthula Hatzimihalaki’s delicious and very easy Quick Cheese Pie for the Lazy Cook, I also added some yellow cheese…

… in Stella Vaxevani’s Mini Savory Kourou Dough Pies, I added different combinations for the filling.  You can make the filling with dill and red pepper, or the one with turkey, or the one with smoked ham… or you can make all of them for a nice variety and sprinkle them with some sesame seeds… 

…and last, but definitely not least… Sintages Pano’s sweet and elaborate Individual Custard Pies with Two Types of Chocolate… simply divine…

Needless to say, there were no leftovers… not even a crumb!

The truth is I’ve really enjoyed this whole process with all of you! I feel like I’ve found one more way to keep in touch and communicate with you.

So, I promise to continue doing this… with lots of new recipes and themes…
