Hello again and happy fall to everyone!!!


Summer may be almost over but don’t think that I haven’t been testing your recipes all this time…


I had a little extra time over summer and I chose some of your recipes that really peaked my interest!


In today’s diary, I’m going to present 3 of your pies!


Eggplants are still in season and their taste is still sweet. This is one of the reasons I chose to try an Eggplant Pie Rolls sent in by Katerina Tsoutsa! I added a little balsamic vinegar which blends very nicely with the feta cheese and eggplants!



Another recipe I chose is a Sweet Pumpkin and Rice Phyllo Pie. Pumpkins have started to appear and I think we can safely say that they are Fall’s superstar! Pumpkins are a very versatile ingredient. You can use them in both sweet and savory recipes! This pie was sent in by Evangelia Paparizou and it is sooooooo tasty, crunchy and juicy! Since I adore ginger, I thought I’d add some ginger powder to the filling to give it a little lemon-peppery aroma… Serve it with caster sugar and ground cinnamon and enjoy it with friends along with some coffee…



And last… for those of you who do not have so much time to cook, I chose a very easy and quick but very delicious cheese pie sent in by Maria Stamatopoulou. I added a little thyme and believe me it turned out great!
