Christmas Tree

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

  • Preheat oven to 180* C (350* F) Fan.
  • Grease the giant cupcake baking pan with butter and dust with flour and set aside.  (The giant cupcake pan that I am using is made up of 2 parts. One part for the cupcake base and the other part for the cupcake top).
  • Line a classic cupcake pan with liners and set aside.
  • In a bowl, add the sugar and butter. Whisk until the mixture is fluffy with a creamy texture.
  • Add the eggs, one at a time, making sure each addition is completely incorporated before adding the next. Scrape down the sides of the bowl also.
  • Sift the flour, baking powder and salt into the bowl. Whisk.
  • Add the mik and vanilla. Whisk until you have created a smooth dough.
  • Fill the giant cupcake pans ¾ of the way smooth the surface with the back side of a spoon.
  • Fill the cupcake pan ¾ of the way with the remaining mixture.
  • Bake the giant cupcake for 40-45 minutes and the small cupcakes for 15-20 minutes.
  • WARNING!!!!! You should not put the cupcakes AND the cake in the oven at the same time because when you open the oven door to remove the cupcakes that will be ready, the volume of the cake that is still baking will drop.
  • Bake the cupcakes first and then bake the giant cupcakes.
  • When ready, remove from oven and allow to cool on a wire rack.

For tree decorations

  • In a mixer’s bowl, beat the butter and icing sugar for 3-5 minutes, until light and fluffy and the icing sugar is incorporated.
  • Add the heavy cream and food coloring paste and beat until you have a smooth and creamy frosting.
  • Transfer to a pastry bag fitted with a star tip.

For garland

  • In a mixer’s bowl, beat the butter and icing sugar for 3-5 minutes, with the paddle attachment until the icing sugar is incorporated.
  • Add the heavy cream and beat until you have a smooth, soft frosting.
  • Transfer to another pastry bag fitted with a star tip.

To assemble

  • Pipe the white frosting on the top of the large piece or bottom of the giant cupcake and cover with second piece.
  • Decorate the top part of the giant cupcake with white frosting.
  • Pipe green rosettes on the top side of the cake, beginning from the middle and working towards the top.
  • Create Christmas garlands between the white frosting and under the base of the tree with the white frosting.
  • Decorate the cupcakes in the same manner, piping green frosting and creating garlands with the white frosting.
  • Top with the colored chocolates and sprinkle with red sugar and red sprinkles.
