- Remove the stems of the strawberries and add them into a food processor along with the sugar.
- Process for 1 minute until the strawberries are completely dissolved with the sugar and they become a puree. Transfer the puree to a bowl.
- In a mixer’s bowl beat the heavy cream with the whisk attachment at high speed, for 3-4 minutes, until it is fluffy and well-whipped.
- Remove the bowl from the mixer and add half of the strawberry puree.
- Lightly fold the puree with the whipped cream until there is a uniform pink mousse.
- Serve in glasses by dividing the rest of the strawberry puree on the bottom and the mousse on top.
- Refrigerate for at least 1 hour until the mousse thickens.
- Decorate with strawberries and serve.
