Chocolate poke cake

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

Method

For the syrup

  • In a pot add the water, the sugar, and transfer on heat.
  • Let it come to a boil until the sugar melts.
  • Add the cognac and set aside to cool.

For the cake layer

  • Preheat the oven to 180ο C (350ο F) set to fan.
  • In a mixer’s bowl add the sugar, the eggs, and beat with the whisk attachment at high speed for 3-4 minutes until the mixture is fluffy.
  • In a bowl add the cocoa powder, flour, baking powder, salt, and mix.
  • In the mixer’s bowl with the rest of the ingredients add the seed oil, the solid ingredients, and mix softly with a serving spoon until they are homogenized.
  • Transfer the mixture into a 32x25 cm baking pan, greased with sunflower oil and floured with cocoa powder.
  • Spread well with a spoon so to cover the whole surface of the baking pan, and bake for 10-12 minutes.
  • Remove and pour over the cold syrup right away. Set aside for 20-30 minutes until the whole syrup is absorbed and the cake is cool.

For the mousse

  • In a bowl add the chocolate couverture cut into pieces. Transfer over a pot with simmering water, creating a bain-marie, and let the couverture melt.
  • In a mixer’s bowl add the heavy cream and beat until it becomes whipped cream. You do not want it to get very thick.
  • In the bowl with the whipped cream add the vanilla and then, the melted couverture in two batches. You want the couverture to be warm but not hot.
  • Mix with a serving spoon until the ingredients are homogenized.
  • Spread the mousse over the cake and refrigerate for 2-3 hours until the mousse thickens.

For the ganache

  • Add the heavy cream into a saucepan.
  • Transfer over medium heat and let it come to a boil.
  • Add the couverture chopped into pieces, leave it for 10-15 seconds and then, mix with a spoon until the ingredients are homogenized.
  • Spread the ganache over the mousse and allow 3 hours for it to stabilize.
  • Serve with melted white chocolate couverture.
