Mirror glaze cake

Method

For the cake

  • In a mixer, add the heavy cream, icing sugar, vanilla extract and beat at medium speed for 2-3 minutes until the mixture is thick and has a mousse-like texture.
  • Add the melted dark chocolate couverture and beat at medium speed for 1-2 minutes until incorporated.
  • Remove the bowl from the mixer.
  • Transfer to a round 24 cm silicone mold and spread with a spatula. Make sure to place the silicone mold on a baking pan, so that it is stable and you can transfer it.
  • Place the cake layer on top and put it in the freezer.

For the glaze

  • When the cake freezes, start making the glaze.
  • In a bowl with ice water, add the gelatin and set aside for 5 minutes until soaked.
  • Place a pot over medium heat and add 130 g water, sugar, corn syrup and let it come to a boil.
  • Add the condensed milk and the gelatins (after squeezing them). Whisk and remove from the heat.
  • Add the white couverture into a dosing container and crumble by hand. Add the mixture from the pot and beat with an immersion blender at low speed until bubbles are formed. Set aside to cool. The mixture’s temperature must not be above 30ο C (86οF), otherwise, it will not stand on the cake.
  • Keep ¼ of the white mixture and place the rest in 3 bowls.
  • In the first bowl, add the red color, in the second the yellow, and in the third the black one. Stir.
  • When the mixtures are cool, transfer the red mixture into the dosing container, then the black and finally, the yellow. Don’t stir.
  • Place a deep plate upside down on a baking pan, so that the excess glaze drains.
  • Remove the cake from the freezer, take it out of the pan and place on the plate with the cake layer down.
  • Pour the color mixtures by making sure to cover all of the cake’s surface. Set it aside to cool.
  • Serve with crumble, ice cream, any kind of syrup, and mint leaves.
