French-style apple tart (Tarte Tatin)

French-style apple tart (Tarte Tatin)


For the tart crust

  • In a bowl add the flour, the icing sugar, the salt, and the ice-cold butter cut into cubes.  
  • Wear gloves and rub the mixture well with your hands until the flour is yellow, like wet sand.
  • Add the egg, the ice-cold water, and mix until the mixture is homogenized and there is an elastic dough. 
  • Wrap the dough in plastic wrap and refrigerate it for 1 hour to rest.

For the apples

  • Preheat the oven to 180oC (350o F) set to fan.
  • Heat a small frying pan over medium heat and add the sugar in 5 batches.
  • Wait for the first batch of sugar to melt and turn slightly golden before adding the next batch.
  • Add the 190 g butter, the lemon juice, and whisk until the ingredients are homogenized.
  • Remove the pan from the heat and pour the caramel into a 25 cm round baking pan.
  • Carefully spread the caramel to cover the whole surface of the pan.
  • Peel the apples and remove the seeds.
  • Cut the apples into 4 and add them into a bowl along with the cinnamon.
  • Put the apples into the baking pan, arranging them evenly on top of the caramel.
  • Cut the remaining 40 g butter into cubes and scatter them on top of the apples.
  • Cover the baking pan with aluminum foil and bake in the oven for 20 minutes.
  • Remove the aluminum foil and bake for 20 more minutes.
  • Remove the baking pan from the oven and set it aside to cool for 20 minutes.

For the tart

  • Dust your working surface with flour and use a rolling pin to roll out the tart dough into a 27 cm circle.
  • Spread the dough on top of the apples and fold the overhanging dough inwards.
  • Use a knife to prick the dough on several spots and bake in the oven for 35 minutes until golden.
  • Remove the baking pan from the oven and set it aside for 4 hours to let the tart cool.
  • Flip over the baking pan onto a serving platter and turn the tart out of the pan. 
  • Serve, optionally, with vanilla ice-cream and mint leaves.
