- 175 g olive oil
- 3 eggs
- 150 g yogurt (preferably Greek yogurt)
- grated zest from 2 oranges
- 225 g self-rising
- 175 g granulated sugar
- 1 teaspoon vanilla extract (2 packets vanilla powder)

- Preheat oven to 180* C (350* F) Fan.
- In a large bowl, add the olive oil, eggs, yogurt and orange zest.
- Beat with a hand whisk until all of the ingredients are combined and the yogurt is completely incorporated in the mixture. You can also do this in a mixer but it’s not necessary.
- Add all of the remaining ingredients and mix with a spatula until you have a smooth and well combined mixture.
- Grease and flour a 10x25 cm rectangular cake or loaf pan. Pour in cake batter.
- Bake for 50 minutes.
The more you beat the batter the lighter and fluffier your cake will be!
