Method
- Preheat oven to 180* C (350* F) Fan.
- In a large bowl, combine the flour, baking powder, cinnamon, cloves and salt.
- In a separate bowl, whisk together the eggs, milk, oil, sugar and vanilla.
- Add the egg mixture to the flour mixture and stir with a spatula until completely combined.
- To each nonstick muffin tins, add 1 teaspoon of butter, 1 teaspoon of brown sugar and 1 teaspoon of lychees.
- Divide the mixture evenly between the muffin tins.
- Bake for 25-30 minutes.
- Serve muffins warm and sprinkled with icing sugar and ground cinnamon.
