Roast apple cider chicken with estragon


  • Place a saucepan over medium heat.
  • Add the apple cider and boil until it reduces to half its initial volume.
  • Chop each of the chicken thighs into 3 pieces.
  • In a bowl, combine the all spice, salt and pepper.
  • Cut the apples in half and remove the peel and seeds. Cut each half into ½ cm slices.
  • Quarter the mushrooms.
  • Place a large, deep pan that has a lid over heat.
  • Add half of the butter and let it melt.
  • Add the apples and mushrooms. Sauté until golden.
  • When ready, remove from pan and keep warm.
  • Add the remaining butter to the same pan.
  • Let it melt, add the pieces of chicken and sauté until golden.
  • Add the apple cider and bring to a boil.
  • Lower heat, cover pan and let it simmer for 20-25 minutes, until the chicken is done.
  • Add the apples, mushrooms, estragon, heavy cream, salt and pepper.
  • Cook for another 5 minutes, until the sauce thickens.
  • Serve with baby potatoes.
