Chicken souvlaki with peppers

Method

  • Preheat oven over 180°C (355* F) Set to Fan.
  • Brush the fillets with oil and then season with salt and pepper. Toss to coat.
  • Heat a pan over heat until it is smoking.
  • Sauté the fillet in the pan until golden.
  • Place the 3 herbs and garlic in the bottom of a baking pan.
  • When the chicken is golden, transfer to the baking pan with the herbs. In that way, when it is baked, all the aromas will go into the chicken.
  • Melt the butter and pour it hot over the chicken. Bake for 10-15 minutes.
  • Heat the rest of the olive oil in the same pan.
  • Cut the bell peppers into 2 cm pieces. Season with salt and pepper and sauté for 1-2 minutes until slightly soft. Remove from pan.
  • Remove chicken from oven and allow it to slightly cool so you can touch it.
  • Cut the chicken into 2 cm pieces.
  • Thread the chicken and bell peppers alternatively onto the skewers and serve on top of fresh rocket leaves.
