Baked eggplants – Saganaki

Baked eggplants – Saganaki


  • Preheat the oven to 190°C (370° F) set to fan.
  • Score the eggplants all over in a criss-cross pattern, without cutting through the skin. 
  • Brush them with olive oil, season with salt and pepper, add them to a baking pan with the cut side facing down, and bake them until they soften, for 40-50 minutes.
  • In a pot over medium heat, add the olive oil, sauté the garlic for 1 minute, add the tomato paste and sauté for 1 more minute, and then add the canned tomatoes, the salt, the pepper, the honey, the balsamic vinegar, and the herbs. 
  • Add the water and simmer until the sauce thickens. 
  • Flip the eggplants over, pour the sauce over them, sprinkle with the feta cheese and bake for 15 minutes. 
  • Serve with finely chopped basil.
