Vanilla parfait

  • Vegetarian Diet

Vanilla parfait


  • Place a pan over medium heat.
  • Add the almond slivers and toast for 1 minute. Stir often so that the almonds are not burned.
  • Remove the pan from heat and transfer the almonds to a bowl.
  • Add the heavy cream to a mixer’s bowl. Beat at medium-high speed until it is fluffy like whipped cream.
  • Transfer to a bowl, cover with plastic wrap, and refrigerate.
  • Separate the egg whites from the yolks. You can use the whites for other recipes.
  • Add the yolks to the mixer’s bowl. Beat at medium-high speed for 5-6 minutes until white and fluffy.
  • Add the water and the sugar to a pot. Place pot over medium heat.
  • Let the syrup comes to a boil until the sugar melts. Measure the temperature with the thermometer until the syrup reaches 110ο C (230ο F). It will take about 10 minutes to reach that temperature. As soon as it does, remove it from the heat.
  • Slowly pour the syrup into the bowl with the yolks while continuing to beat at medium speed.
  • Continue to beat for 5-7 minutes until the temperature of the mixture drops.
  • Remove the bowl from the mixer. Add the orange zest, vanilla extract, toasted almond, and whipped cream.
  • Mix gently with a silicone spatula until incorporated.
  • Empty the mixture into a bowl, cover it with plastic wrap, and make sure it touches the surface of the ice cream. Put it in the freezer for 8-10 hours until firm and set.
  • Serve with finely chopped raw almonds, dried cranberries, and coconut flakes.
