- In a bowl, add the bulgur, boiling water, pepper and salt. Cover bowl with plastic wrap and allow it to absorb all of the water for 60 minutes.
- You can also prepare the bulgur in the following manner:
- Place a pan over heat and let it get hot.
- Add the 3 tbsps olive oil and bulgur. Sauté for 3-4 minutes while constantly stirring with a wooden spoon.
- Add the boiling water, salt and pepper. Mix and remove the bulgur from heat. Immediately cover with plastic wrap and allow it to absorb all of the water.
- Finely chop the parsley, mint and spring onion. Transfer to a bowl and add the 3 tbsps olive oil, pepper, salt and lemon juice.
- Remove the seeds from the cucumber, finely chop it and add it to the bowl. Mix all of the ingredients with your hands.
- Add the bulgur and mix.
- Transfer the tabbouleh to a deep serving bowl and serve.
