Beetroot and tricolor lentil salad

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

    It is usually followed when someone is allergic to this food.

  • Low in Sugars Diet

    Limits all sources of added sugars and encourages the reduction of high-carbohydrate (high glycemic index) foods. A claim that a food can be classified as LS can be made when it contains less than 5 gr of sugars per 100 gr of solid food or 2.5 gr of sugars per 100 ml of liquid food.

Beetroot and tricolor lentil salad


  • In a pot, add 1,5 liters of water, bay leaf, bouillon cube, and lentils. Boil for 10-15 minutes.
  • Drain the lentils and transfer to a large bowl.
  • Chop the celery root into 2-3 cm cubes.
  • In a pot, boil the other 1,5 liters of water.
  • Add the lemon juice and boil the celery root for 15-20 minutes, until it is tender. Drain and transfer to the bowl.
  • Peel the beetroots and cut into slices. Cut the hazelnuts in half and add them to the bowl.
  • Finely chop the parsley and add it to the bowl.

For the salad dressing

  • In a bowl, add the vinegar, mustard, honey, salt, and pepper.
  • Beat well with a hand mixer until the ingredients are completely combined and gradually add the olive oil and then the sunflower oil.
  • Drizzle salad dressing over the vegetables in the bowl, mix with a wooden spoon and serve with finely chopped parsley.
