- Place a frying pan over high heat, and add the olive oil, the onion and garlic finely chopped, paprika, cayenne pepper, turmeric, and sugar. Sauté until the onion is caramelized, for 5-7 minutes.
- Add the eggplants cut into cubes, the chili peppers, and sauté until golden and tender.
- Deglaze the pan with the balsamic vinegar and let it evaporate, for 1-2 minutes.
- Then, add the water, canned tomatoes, salt, pepper, and simmer at medium heat for 15-20 minutes, until the sauce thickens and the eggplant is done.
- Add the spring onions, beans, and corn, after rinsing them, and mix well.
- Preheat the oven to 180ο C (356ο F) set to fan.
- Take a 6 or 12-cup muffin pan, flip it over, and place the tortillas between the muffin cups. If there are any tortillas remaining, place them after baking the first batch.
- Bake for 10 minutes.
- Serve with the filling and the parsley finely chopped.
