  • Heat the olive oil in a frying pan and soften the garlic over a medium heat.
  • Add chilli powder to taste.
  • Add the tomatoes and stir well, simmer for 5 mins.
  • Crack the eggs in the pan and poach with a lid on the pan until set.
  • Serve with fried potatoes and crusty bread.
