Method
- Heat the olive oil in a frying pan and soften the garlic over a medium heat.
- Add chilli powder to taste.
- Add the tomatoes and stir well, simmer for 5 mins.
- Crack the eggs in the pan and poach with a lid on the pan until set.
- Serve with fried potatoes and crusty bread.
